Barbecue Chicken Grilled Cheese

Did you know that April was National Grilled Cheese month? If you did, then you’re ahead of me. Sadly, I didn’t get the memo in time to really appreciate the deliciousness of this dish. Grilled cheese sandwiches are one of my ultimate comfort foods. It reminds me of snowy days when I was little, eating it for lunch, along with a cup of tomato soup. There was never a more perfect meal in my mind.

Fast forward years later and I still make grilled cheese sandwiches every now and then. I love the crusty bread, cheesy center, and all-around deliciousness. But now that I’m older, my tastes have evolved. Instead of making a standard grilled cheese sandwich, I like to get more creative and add in some veggies, meat, and even fruit. I love experimenting with new flavors and have made some tasty combinations. One of my favorites has been this Barbecue Chicken Grilled Cheese. Filled with tender chicken, tangy barbecue sauce, and Swiss cheese, this is the ultimate sandwich to keep you full and satisfied. Whether you need a quick lunch or easy dinner, this sandwich is sure to wow your taste buds.

This Barbecue Chicken Grilled Cheese really is the ultimate treat. Nothing screams comfort food more than a plate of carbs and melty cheese, right? And not only is this sandwich kid-friendly, but it’s also husband-approved, too. As I was preparing this sandwich for lunch a few weeks ago, my husband ran into the kitchen to make sure that I made an extra one, just incase he needed something for lunch the following day. But what he really meant was that he wanted a second sandwich for lunch because it was just that good. Cheese definitely makes every sandwich better (in my opinion) but pair it with some barbecue sauce and you have a winner on your hands.

And like most sandwiches, this Barbecue Chicken Grilled Cheese a breeze to make! You can have this sandwich prepared, cooked, and ready to be devoured within a matter of minutes. Sounds pretty good, huh? I chose to use rotisserie chicken that was already cooked and shredded. You can find this in most deli sections of your local grocery store. This comes in handy when you don’t feel like using your oven. I also used a good quality barbecue sauce and some fresh Swiss cheese slices from my grocery store’s deli. And for the bread, I used texas toast, which is thick and hearty…perfect for sandwiches! These ingredients definitely take this sandwich to a whole new level.

Simply butter one side of a slice of bread and place that onto a skillet. Mix the rotisserie chicke and barbeque sauce together and layer on top of the bread. Top that with a generous helping of Swiss cheese (the cheesier, the better, right?) and place the second slice of bread on top. Butter that slice and then turn on your skillet. Once both sides are golden brown and the middle is oozing with cheese, this Barbecue Chicken Grilled Cheese is ready. Fast, easy and full of flavor, this will be your new favorite sandwich!
