One Pan Zesty Burrito Bowl

So it’s not taco Tuesday but it is burrito bowl Wednesday, friends. Get excited because I know I am! So maybe I’m being just a little overdramatic, but I feel it’s necessary for a Wednesday. We’ve finally made it halfway through the week, which is a cause for celebration in my book.

But more importantly, I’m celebrating because I finally get to share my latest and greatest new Mexican dish with you. I’ve been holding out on this recipe for weeks and it’s time it made its debut. It’s no secret that my husband and I adore Mexican food. From salsa, to margaritas and everything in between, our love for the cuisine is quite serious. Although we do loving going out for Mexican, we also enjoy making it in the comfort of our own kitchen.

And because I love experimenting with new dishes, I decided to whip up this One Pan Zesty Burrito Bowl. Made in one pan and ready in 30 minutes, this burrito bowl is filled with brown rice, black beans, fresh veggies, and cheese. It’s perfect to serve for lunch or dinner and will satisfy your craving for Mexican food.

Their burrito bowls hold a special place in my heart, and though I won’t claim that these are better than Chipotle’s, I will say that it ranks right up there.

And because you can make this dish right at home, you can control the amount of veggies and flavor to add in. And that’s always a winner in my book, especially when you have a husband that doesn’t like much too much spiciness. So if you’re not a fan of brown rice, swap it out for white rice. Don’t like black beans? Skip ‘em!

Did I mention that this One Pan Zesty Burrito Bowl takes just 30 minutes to make? That means you can spend less time in the kitchen and more time chowing down on this amazing dish.

And like most of recipes (you knew that was coming, right?), this burrito bowl is so easy to make! To start, sauté some onions and garlic in a large pan over medium heat. I chose to leave out the meat in this dish, but feel free to add in some chicken or beef to make it more filling at this point.

Then stir in some brown rice, corn, black beans, salsa, and seasoning. Add in some chicken stock for extra flavor and let the rice cook. When the rice is tender, this bowl is ready to be devoured! Serve over lettuce or eat as is, adding your favorite toppings, such as tomatoes, sour cream, black olives or avocados.
