Strawberry Lemonade Popsicles

It’s that time of the year when I step outside and my hair immediately turns into Monica’s from Friends.

Ok, so my hair doesn’t quite turn into Monica’s, but sometimes it sure does feel like that, and I don’t even have curly hair. The humidity has arrived in full force, along with the heat.

And that means the days are getting longer, the weather is getting warmer, and I’m all about summer. One of the best things about living in the Midwest is that we get a full range of seasons. Our fall season is can be cool and mild, which is perfect for sweatshirt weather and apple picking; our winters are cold and snowy (which I’m not too fond of), and our summers are often hot and humid (hence my Monica-like hair). And as much as I complain about the winter, the other three seasons definitely make up for it. Especially summer.

And when it’s hot outside, I long for cool treats to keep me refreshed. And that’s why these Strawberry Lemonade Popsicles have become a favorite in my house. Yep, even the hubster has been chowing down on these frozen goodies because they’re just that good.

Made with only four ingredients, these Strawberry Lemonade Popsicles are sweet, tangy and the perfect treat to keep you cool all summer long. With hints of fresh strawberries and tart lemons, the delicious drink will now become your favorite popsicle.

When I was first experimenting with these Strawberry Lemonade Popsicles, I made them with a carton of lemonade and strawberries. I mean, you really can’t get much easier than that, right? That version of these pops turned out quite tasty, which means they were devoured within a matter of days. Which led me to the second batch of these popsicles. Instead of using store-bought lemonade, I made my own from just lemons, sugar, and water.  And friends, this version is even better! If you’ve ever had fresh-squeezed lemonade, then you know what I’m talking about.

So let’s talk about how easy these Strawberry Lemonade Popsicles are to make. And since I’m all about easy recipes, you can bet this one is a winner. First, you’ll squeeze about 5-6 lemons to make about 1 cup of lemon juice. Toss that into a blender, along with a cup of water, some sugar, and strawberries. Blend until the mixture is smooth and then pour into six popsicle molds. Freeze for at least three hours and then get ready to be wowed.
